a cozy recipe!

On our first snow day, I made this "Southwest Chicken"....or at least that's what I'm calling it because I can't think of anything better to call it. It turned out pretty tasty if I do say so myself, and it was SO EASY! Doesn't get any better than that!


Southwest Chicken

1 package (1-2 lbs) frozen chicken (rinsed)
1 16 oz. jar of your favorite salsa
1 can of corn (drained)
1 can of black beans (drained & rinsed)
1/3 cup tequila (optional)
juice of 2 limes

Place the frozen chicken in your slow cooker and top with the jar of salsa. Fill the salsa jar just under half way with water and shake to get all of the salsa, pour that over the chicken as well. Set your slow cooker on low, and let it cook for about 4 hours.
After 4 hours, add in the remainder of the ingredients and stir together. Cook on low for about 4 hours longer. When the chicken is cooked through, shred it with 2 forks. Mix the chicken back in, and add more water/salsa/broth if you need additional moisture.

We put ours in corn tortillas and topped with sour cream and cheese, but this would be great in enchiladas or a mexican casserole type thing too!


Variations:

I used boneless, skinless chicken breasts, but you could use whatever you have on hand...thighs, bone-in breasts....whatever! I would recommend removing any skin though.

Your chicken doesn't have to be frozen...just cut the time in half it is thawed. You could also cook this on high for about half the time, but I like to set it in the morning and let it cook all day. Smells divine.

Our salsa was pretty flavorful, (On the Border, yum!) so I didn't need to add any salt, pepper, or additional seasonings, but you may decide you want to!

I had some tequila on hand, so I added it, but you don't have to. It just adds a little zip to the chicken.




We are having a little Super Bowl shindig at our house, so I need to figure out what to make! Do y'all have any good appetizer recommendations for me?? I'd love to hear from you :)

Oh gosh that sounds yummy! I made a yummy appetizer a few weeks ago... Take chicken breasts and cut them up into little pieces, then wrap them in half a strip of bacon and hold together with a toothpick. Place them all on a baking sheet and sprinkle with brown sugar. Bake at 400 until bacon is crispy (and make sure chicken is cooked through).

I also have a really yummy dip that everyone seems to love! I call it Fiesta Chicken Dip.

1 can cream of chicken soup
2 cans of pre-cooked chicken
1 can Rotel (tomatoes and green chilis)
1 can green chilis
1 brick cream cheese
1 tub sour cream

Place all ingredients in crock pot and let it get hot and melty...serve with tortilla chips.

This one is sooo good! Have fun :)
